fresh coriander

The fresh leaves of the coriander plant, bright, lemony and faintly soapy in aroma.

Fresh coriander is sold alongside the herbs in most larger supermarkets, and reliably in Turkish or Asian shops, often in large, inexpensive bunches. It wilts quickly and keeps best standing in a glass of water in the fridge, like a bouquet.

Substitute:

Flat-leaf parsley gives colour and green freshness but not the lemony aroma that defines dishes like Portuguese açorda. It is therefore no true substitute, and dried coriander leaf or coriander seed will not do the job at all.
