Wafer paper
Paper-thin, neutral-tasting sheets of starch and water used as an edible base for sticky sweets such as turrón or macaroons.
In German-speaking countries wafer paper is sold in every supermarket, with the widest choice around Christmas, otherwise among the baking supplies or in health food shops. In English-speaking countries it is found in cake-decorating suppliers or by mail order, often labelled edible rice paper.
Substitute:
There is no edible substitute; baking parchment lightly dusted with cornflour stops the sweet from sticking but must be peeled off before serving and leaves a less smooth base. Vietnamese rice paper for spring rolls is a different product and does not work here.
